Tomato, Cucumber & Onion Salad with Mandarano Balsamic

When you grow tomatoes and cucumbers and are looking for ways to use up your garden bounty, it's a no-brainer to pair them up in a salad.  They're amazing added to a fresh garden salad, but why not let them be the star of the show?!  This salad is like a celebration of summer with the fresh veggies taking the spotlight.

I was recently contacted by the folks that make Mandarano Balsamic Glaze & Sauce and asked if I'd like to try a bottle.  Of course I say yes!  I knew right away that I'd be using it on the salad.  The sweet yet sour, thick, and rich sauce is is a high quality Balsamic Vinegar reduction made from a centuries-old family recipe and, get this, produced and bottled entirely in Modena, Italy using only authentic regional grapes.  Sounds amazing right? 

The Mandarano's Balsamic Glaze & Sauce was the perfect way to accent my Tomato, Cucumber and Onion Salad.  The drizzled sauce was perfectly complimentary to the crisp veggies and creamy feta.

I'm going to use this stuff on everything.  The Mandarano's suggest using it on meats and fish, roasted vegetables, eggs, ripe fruit (like strawberries, pears and apples), and even desserts (like chocolate, peanut butter and even ice cream!).  YUM!


  • 2 large tomatoes, chopped
  • 1 cucumber, quartered and sliced
  • ½ red onion, cut in half and thinly sliced
  • 4 ounces feta cheese, crumbled (I like a lot of feta, but you can use less depending on how much you like)
  • olive oil
  • Mandarano Balsamic Glaze & Sauce
  • salt and pepper


  1. Place the tomatoes, cucumbers and onions into a large bowl.  
  2. Top with the crumbled feta and drizzle with olive oil and balsamic sauce.  (I like to use at least a couple tablespoons of both.)  
  3. Season with salt and pepper, to taste.  You can use a spoon to toss all of the ingredients together, but I prefer a layered salad.


  • I made this again (pictured below) and used sweet onion instead of red onion and added a little fresh basil.  It was delish! 
  • Kids will like this salad, too.  The Balsamic Sauce is rich and aromatic, but not overwhelming.  My 4 year old gobbled it right up!
